In the glass, Ainos reveals a deep, dark ruby hue. Aromas unfold with layered blackberry, black cherry, cedar, vanilla, and subtle mint, intertwined with hints of cocoa and baking spice. The palate is rich and full-bodied, delivering concentrated blackberry, dark chocolate, and spice framed by polished tannins and balanced oak. The finish is long, evolving, and commanding — a wine of depth, structure, and presence, worthy of its name.

The fruit for Ainos was harvested entirely at night, beginning at 1:00 AM and concluding by 10:00 AM, preserving natural acidity, freshness, and aromatic purity. The Cabernet Sauvignon was sourced from Block 2, third pick of the 2022 harvest in late September, selected for optimal ripeness and phenolic depth.
The fruit was destemmed and fermented with an extended maceration of nearly three weeks, allowing for deep extraction of color, structure, and complexity before being transferred to barrel. The wine was aged for 18 months in French oak — 50% new and 50% once-used Bordeaux barrels — integrating power with refinement.
