Winemaking

Early morning handpicks of the Cabernet Franc where in late September of 2016, the fruit was de-stemmed and fermented in small tanks, with regular pump overs to aid extraction. In order to let the varietal fruit shine through, the wine was aged in French oak barrels with a light-medium toast for over 28-months.
